Japanese knotweed is one of the most aggressively condemned plants in the Northeast. By following its transformation from an invasive nuisance into food, this talk explores how inherited labels shape what we notice, what we discard, and whether closer attention can turn a problem into a form of stewardship. James Gop is a chef, writer, educator, and the founder of Heirloom Fire, an open-fire culinary company based in the Berkshire Hills. His work asks how deeper attention to place and process changes what we value and how we gather. For more than two decades, his work has explored the intersection of food, land, craft, and hospitality through live fire, foraging, preservation, and the use of overlooked ingredients. This talk was given at a TEDx event using the TED conference format but independently organized by a local community. Learn more at https://www.ted.com/tedx
